A catering company based in Lake that specialises in sandwiches and baguettes has been handed a 1-star food hygiene rating after inspectors from the Isle of Wight Council visited in March.
Full-spread offers a full range of filled sandwiches, baguettes, drinks, crisps and snacks as well as salads, pasta salads and other lunch-based snacks, but Environmental Health Inspectors found a total of 13 faults in the operation of the Lake-based catering company when they visited on 10th and 24th March 2023.
Inspectors found, most notably, that there was poor stock rotation at the premises with some foodstuffs including corned beef, turkey, gammon ham, and tuna being given a 4-day shelf life once opened – instead of the 2-day recommended shelf life. It was also noted that defrosted chicken that was being used to fill sandwiches was – in some cases – being given an extra 4 days after it had been defrosted, despite it needing to be used within 24 hours.
These practices are against the Hazard Analysis and Critical Control Points protocols in which any sandwiches that are to be extended beyond their shelf life should be supported by shelf-life testing. Full spread was urged to follow The Food Industry Guide to Good Hygiene Practice.

It was also found during the inspection that the hot water in the wash basin was too hot and, despite being told to reduce the temperature at the last inspection, it was still too hot and was measured at 57.2c. It was also found that a food handler was seen using the metal worktop to prepare sandwiches as opposed to a designated chopping board. Staff were also unaware of the contact time when using Swan sanitiser.
Inspectors also found that there was a build-up of rust on the food prep tables, walls within the preparation area and at the bottom of the door to the chiller. Other areas of the premises including the oven front and microwave were also found to be dirty whilst black mould growth and cobwebs were seen on the ceiling of the chiller unit.
No means of ventilation were installed above the oven meaning the cladding behind the cooker had begun to bow and was scorched in places. This was discussed at a previous inspection back in 2022 but has not yet been tended to.
Other – less notable defects – included worn paint on the walls, floors and ceiling.
This latest food hygiene inspection doesn’t relate to the operation of the Full Spread jiffy-truck which was awarded a 5-star food hygiene rating when graded back in February.

Unreal how many people eat produce that you assume has been correctly managed especially chicken defrost and used correctly do wonder how old the meat was before it was frozen,hopefully people wash there hands after using the toilet before preparing sandwiches certainly will not be using this service
Over the top food hygiene weakens our immune system, I think about the unhealthy stuff I used to eat growing up in the 70’s.
In 1975 the average life expectancy in the UK was below 73. In 2021 it was over 81. One of the biggest factors in improving life expectancy since the middle ages is better hygiene, better sanitation, improved health care.
In recent years, environmental health authorities are also better at tracing food poisoning incidents, leading to increased understanding of what causes them. This in turn had led to improved inspection regimes, reducing the number of incidents.
You are welcome to go live in a country with lower hygiene standards and lower life expectancy if you wish to.
As someone who has recently lost a parent to Salmonella poisoning- poor food hygiene also kills people!

I’m wondering if people have become ill from eating from there without realising, thinking it was a bug?? Definitely won’t be eating there? How do these places think it’s acceptable to behave in this way?
This is really going to hurt them now. I’ve been in catering for over fourteen years and I cannot stress how crucial appropriate sanitation and good maintenance is in establishments like these. There is no excuse for sloppiness for both, especially with regards to the health and wellbeing of those who pay you good money for your services. The very least they deserve is to know their food was prepped in the most sterile of environments as possible

Spitted in the Road whilst carrying the food.
I would not eat their Full Spread filth if it was f.o.c.

Not getting Council, clearly this business needs to up its game immediate effect, but by doing this and publicaly putting down will most probably mean company will close, staff will then claim benefits, Council will loose thousands in rates and landlord find another tenant – cost to public thousands in lost taxes and paying benefits. Council should do enforcement action ( undertake it’s self) and maybe small loan to sort – therefore food becomes safe,staff keep employment and taxes and rates paid.. I’ll give it a couple of weeks before ordering from them at moment.
This inspection scheme was introduced by national government. It was felt the public should know the hygiene ratings of food establishments.
Many companies having carried on after a low score, improving their ratings in the next inspection. And of course most establishments have scores of 4 or 5.
You suggest if the council had the freedom to keep this quiet they should do so. They would then be accused of ‘cover ups’ and ‘secrecy’.
Safest way to eat these day’s is make it yourself, then at least if you get ill ,it’s your own fault!!!!
Standards of hygiene have definitely gone downhill…..
Surely commonsense, tells you clean as you go ,check fridge/ freezer temperature, defrost food properly ,etc etc ….

This isnt news, this is another effort at destroying another island business. They clearly follow the industry guide to good hygiene practice as they were awarded a 5 star in their jiffy van. Agree that there are some items that need to be dealt with but the inspection didn’t high light any think major & they followed shelf life testing as suggested. How can you be scored down for having hot water. I think the scoring mechanisms need reviewing because this is clearly subjective inspecting which can be unfair.
You think the council should cover this up? Clearly something went wrong and as the report says, they were warned about issues in a previous inspection.
Most of the inspection findings were binary: water temperature, rust, lack of ventilation, not using chopping boards etc…
It is either correct or not, doesn’t sound very subjective to me.
Other island catering departments do just fine, when it comes down to food prep and basic sanitation if you can’t get that right you shouldn’t be anywhere near food simple.

Oh Dear!! I have eaten their products almost every day for about the last twelve years and I don’t think I have ever suffered any ill effects except putting on weight. I hope to continue eating their sandwiches for the foreseeable future, this will not stop me.
Maybe its time then you thought about your diet as their food is obviously not good for you in more than one way.
Couldn’t agree more we always eat there products and have done for over ten years always good, I bet the inspectors have university degrees and never worked in the real world.
