For the first time, Island Echo is introducing recipes that you can enjoy at home.
To kick things off, this week’s recipe is Bread and Butter Pudding for 4. Enjoy!
Ingredients
- 25g butter
- 2 eggs
- 50ml double cream
- 8 slices of bread
- 50g sultanas
- 2 tsp cinnamon powder
- 350ml milk (full-fat)
- 25g granulated sugar
- nutmeg (grated)
Method

Grease a suitably sized tray with butter.

Cut the crusts off the bread and spread each slice on one side with butter, before then cutting into triangles.

Arrange a layer of bread in the bottom of the dish, buttered-side up. Then add a layer of sultanas and sprinkle with a small amount of cinnamon. Repeat the layers of bread, sultanas and cinnamon, until you have used up all of the bread. Finish with a layer of bread, then place aside.

Warm the milk and cream in a saucepan over low heat. Do not let it boil. Crack the eggs into a bowl and add 3/4 of the sugar, lightly whisk until pale.

Add the warm milk and cream mixture and stir well, then strain the custard into a bowl. Pour the custard over the bread layers then sprinkle with nutmeg and the remaining sugar. Leave to stand for 30 minutes.

Preheat the oven to 180C/160C Fan/Gas 4. Place the tray into the oven and bake for 30–40 minutes, or until the custard has set and the top is golden brown.
