A popular Chinese takeaway in Lake has been given a 1-star food hygiene rating with inspectors finding dirty cloths being used to wipe down surfaces and conditions that would attract rats. Inspectors paid a visit to Ko-Sing back in November and discovered a number of issues, which has led to a 1 food hygiene rating being awarded. During the inspection, Environmental Health officers found that dirty cloths – which can become heavily contaminated with bacteria – were being used to wipe down surfaces and boards. It was also found that the general standard of hygiene was poor – particularly the floor throughout, bins used for storing flour, sugar and salt, and handles of fridges, freezers and dry store. Open containers of sauces and defrosting meat on the floor were found in the rear storage room, and numerous containers/bags of food in freezers and refrigerators which were uncovered. The external area adjacent to the kitchen, where the waste storage bins are sited, was found to be in a condition that would attract rats and mice due to the amount of vegetation and fallen apples on the ground. Also due to the redundant equipment and vegetation there, it is likely to be an area where rats and mice can harbour without being detected. It was also noted by inspectors that there was a risk of accidentally contaminating food with allergens not contained in the dish because celery was stored alongside other foods on a worktop and not sealed in a clearly labelled airtight container. Furthermore, equipment and utensils which come into contact with open high-risk food were being washed using a detergent only. Other issues raised include rusty fixtures, protective clothing being in a dirty condition and a pile of aprons in a box on the dry food store shelving that was dirty. Ko-Sing was previously awarded a 2-star rating back in 2022.
